Normally, if you order piyaz in Turkey, it arrives plain, but in Antalya, it’s served with tarator sauce. Piyaz is a dish made with boiled dried beans. In Antalya, small beans are preferred for piyaz. Tarator sauce (tahini, olive oil, lemon juice, salt, water, vinegar, garlic), onions, tomatoes, parsley, and eggs are added to the beans.
